What’s the difference between cassava starch & cassava flour ?


Cassava starch   

Some people will tell you that  Cassava Starch & Cassava Flour are the same thing. But they are not.

Cassava starch is a starch extracted from the cassava roots through wet process.The final product cassava starch is white powder similar as potato starch or corn starch .

Cassava flour also is powder-like form white product , but it is different with cassava starch. The cassava flour is made from all the cassava root and retain the nutrients of cassava . Compare with cassava starch , cassava flour has more comprehensive nutrition.

Cassava starch is relatively free from fibre. It is obtained by wet extraction from tubers , while flour is obtained by direct drying of the tuber pieces and pulverising  Typically starch contains 98% starch and less than 0.5% fibre while it is around 75% starch and 1-3% fibre in the flour.
